Roasted Beef Marrow Bones - Recipe

     Roasted beef marrow bones are a special treat.  It is beefy, creamy, gelatinous, soft goodness you can scoop out with a little spoon.  Spread on a cracker, serve with a thick piece of rustic whole grain bread and salad, or by itself as a snack.  I like to sprinkle a little salt and pepper on mine to bring out the beefy flavor.

     There is something primal about eating bone marrow.  I feel like I am not wasting any part of the animal and benefitting from all its nutrients.  I got these bones from my meat guy at the Leesburg, VA farmers market, Woodtrail Graziers.  I prefer a 100% grass fed animal for the best flavor and nutrients.

     Use a little spoon to scoop out the marrow or you will be frustrated when your regular spoon gets stuck with half the marrow sitting inside.  I used my baby spoon from my childhood in the pictures below.  It was the perfect size.  -Long and skinny to reach down in there.



Roasted Beef Marrow Bones

(Serves 6)

6 Beef Marrow Bones
Olive Oil
Freshly Grated Salt
Freshly Grated Black Pepper

Preheat oven to 450 degrees Fahrenheit.  Place bones in a roaster cut side up.  I lay very tall ones on their sides.  Rub each one with a little olive oil.  Grate salt and pepper over bones.  Roast 20-30 minutes until marrow is soft and starts to separate from the bones.    If the bones are intact circularly it will look like the marrow is protruding out of the bone a bit.  You want the marrow soft not melted.

Serve warm with rustic bread or whole grain crackers.  Provide a small spoon to scoop out the marrow.  Once spread, sprinkle with some more freshly grated salt and pepper to taste.
