Roasted Grape Tomatoes - Recipe

     Roasted tomatoes have an intense sun-dried flavor that gives any dish pizzazz.  It is like biting into a little flavor explosion.  When I brought home some organic grape tomatoes from the store I thought, "What can I do with these before I just snack on them, and they are gone in no time?"  How about roasting them?  To make them extra special, I added an infused Tuscan herb olive oil (rosemary, basil, thyme, and oregano).  Then after they were done roasting, I drizzled sweet white balsamic vinegar on top.  Perfect!


Roasted Grape Tomatoes

(Garnish for 6 servings or a Side Dish for 4 Servings)

1 pint Grape Tomatoes cut in half
2 T. Olive Oil Infused with Tuscan Herbs
Salt
Pepper
2 T. White Balsamic Vinegar

Preheat oven to 350 degrees Fahrenheit.  Place parchment paper on a rimmed cookie sheet.  Place tomatoes in a mixing bowl and add the olive oil.  Toss to coat.  Distribute the tomatoes on the paper and sprinkle with salt and pepper.  Roast in the oven for 50-60 minutes.  Be careful to not let the bottoms get to charred.  When finished remove from the oven and drizzle the white balsamic vinegar over the tomatoes.  Serve as a garnish for salad, meat dishes, or vegetable side dishes.
