Mexican Devilled Eggs - Recipe

     One of the favorite things I like to eat at any picnic or party is deviled eggs!  They seem to have an addictive quality that make you want to gobble them up!  Lots of them.  I like mine with a little tang from a good mayonnaise and to be well seasoned.  No bland or blah deviled eggs here.  These have a Mexican flare with cayenne pepper and chili powder.  Have fun for your Memorial Day Picnic!




Mexican Devilled Eggs - Recipe

(Makes 12)

6 Eggs hard boiled
3 T. Mayonnaise
1/8 tsp. Cayenne Pepper
1 tsp. Dijon Mustard
Salt to Taste
1 tsp. Chilli Powder

Cool the eggs in cold water.  Peel them and cut them in half lengthwise.  Take out the yolks and place in a mixing bowl.  Add the mayonnaise, cayenne pepper, and dijon mustard.  Then mash together until smooth with a fork.  Adjust mayonnaise and add salt to taste.  Spoon onto the egg whites and sprinkle with chili powder.  Store covered in the refrigerator.
