Kale, Oats, and Eggs - Recipes

     I like inventing new breakfast dishes.  I also like eating greens for breakfast.  I know, don't judge me!  Those vitamins first thing in the morning make me feel good, -gives me a great start to the day.  So this is a cool way to transform an ordinary oatmeal into a super healthy one.



Kale, Oats, and Eggs

(Serves 4)

2 c. cooked Steel Cut Oats
4 Hard Boiled Eggs, peeled

Into each bowl place 1/2 cup of cooked oats.  Chop the kale into bite sized pieces.  Add 1/4 of the kale, mozzarella, and peaches to the oats.  Mix together.  Add one egg to each bowl and break open with a spoon.
